Shirataki, or "white waterfall" noodles have been enjoyed as a health food in Asia for over 1000 years. Made from the root of the konjac plant, shirataki is composed of soluble fiber which provides a slightly firmer texture than wheat noodles and significantly less calories and carbohydrates.
